La Cocina de Tango brings together newly arranged traditional tango works, music by Astor Piazzolla, a contemporary composition by Finnish composer Sami Pirttilahti, and original pieces by bandoneonist and composer Alex Roitman. Rooted in the tango tradition while embracing new creative directions, the album reflects the collaborative spirit that continues to shape tango in the twenty-first century.

The album's title pays tribute to Tango Kitchen, a building specially designed and constructed for the Stowe Tango Music Festival. From 2017 through 2023, it served as a rehearsal, practice, and creative gathering space for many musicians, including Alex Roitman, Mayu Funaba, and Sami Pirttilahti. The album was recorded on the festival grounds, and the musicians continued to rehearse and refine the music in Tango Kitchen between recording sessions, making the space an active part of the creative process.

Its influence can be heard throughout the recording, not only in the title but also in original compositions such as Ruta montañosa and Panadera, which draw inspiration from the people, places, and experiences that grew out of the Stowe Tango Music Festival community. At the same time, La Cocina de Tango evokes the idea of "cooking" tango music—bringing together tradition, innovation, collaboration, and personal expression to create something new.
